Cream of Potato Soup

Ingredients

  • 5 cups thinly sliced potatoes
  • 1 onion, sliced
  • 2 t salt
  • 2 T butter
  • White pepper
  • 1 T finely chopped parsley
  • 1 can of chicken broth
  • Half-n-half (soup can full)

Preparation

Step 1

Put potatoes and onion in saucepan and barely cover with chicken broth. Add salt, cover and bring to boil, reduce heat and simmer 10 minutes or until potatoes are perfectly tender. Mash or break up potates in their liquid. Add butter and half-n-half (may need more liquid). Reheat to scalding, remove from heat and add parsley for garnish.
