Dijon Baked Salmon

Ingredients

  • 1/4 c butter, melted
  • 3 T Dijon mustard
  • 2 T honey
  • 1/4 c unseasoned bread crumbs
  • 4 salmon fillets (1/4 lb each)
  • EVOO
  • 1/4 c chopped pecans
  • 1 T chopped fresh parsley
  • Salt & pepper to taste

Preparation

Step 1

Heat oven to 400. In bowl combine butter, mustard & honey. Mix together & set aside.

In another bowl mix bread crumbs, pecans & parsley together. Place salmon into baking dish & add oil to bottom to keep fillets from sticking.

Brush each salmon fillet lightly with honey mustard mixture; then sprinkle bread crumb mixture on top of fillets. Bake salmon 12-15 min in preheated oven until it flakes easily with a fork. Season with salt & pepper.
