Ingredients
- 1/2 # ground beef, browned and drained
- 3/4 C onions
- 3/4 C shredded carrots
- 3/4 C diced celery
- 1 t basil
- 1 t dried parsley flakes
- 3 C chicken broth
- 4 c diced potatoes
- 3 T butter
- 1/4 C flour
- 8 oz American Cheese
- 1 1/2 C milk
- 3/4 t salt
- 1/4-1/2 t pepper
- 1/4 C sour cream
Preparation
Step 1
1. Brown ground beef. Drain.
2. Saute onions, carrots, celery, basil and parsley about 10 minutes.
3. Add chicken broth, potatoes to g. beef and vegetables. Cover and simmer about 20 minutes or until the potatoes are tender.
4. Melt 3 T butter, add 1/4 C flour. Add to soup and bring to boil. Cook and stir for 2-3 minutes. Reduce heat and add American Cheese, 1 1/2 C milk, salt and pepper. Stir until cheese melts. Remove from heat and blend in 1/4 C sour cream.
