Chicken and Sausage Gumbo

Ingredients

  • 8 ounces raw boneless skinless chicken breast cutlets
  • 1/8 teaspoon salt, or more to taste
  • 1/8 teaspoon black pepper, or more to taste
  • 12 ounces (about 4 links) fully cooked chicken sausage, sliced into 1/4 inch coins
  • One -14.5 ounce can diced tomatoes with green chilies (not drained)
  • 3 cups reduced sodium fat-free chicken broth
  • 2 cups frozen cut okra
  • 1 teaspoon celery seed or 1/2 tsp. celery salt
  • One red bell pepper, seeded and chopped
  • 1 large onion, chopped
  • 1 1/2 teaspoons Cajun seasoning
  • 1 teaspoon chopped garlic
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon ground thyme

Preparation

Step 1

Season chicken with salt and pepper, and place in the crock pot. Add all remaining ingredients and lightly stir.

Cook on high for 3 to 4 hours or on low for 7 to 8 hours, until chicken is fully cooked.

Remove chicken and place in a large bowl. Shred each piece using two forks – one to hold the chicken and place. And of the to scrape across to me and shred it.

Return shredded chicken to the crock pot, and give you gumbo a star. If you like, season to taste with additional salt and pepper. Serve.
