Ingredients
- 8 ounces raw boneless skinless chicken breast cutlets
- 1/8 teaspoon salt, or more to taste
- 1/8 teaspoon black pepper, or more to taste
- 12 ounces (about 4 links) fully cooked chicken sausage, sliced into 1/4 inch coins
- One -14.5 ounce can diced tomatoes with green chilies (not drained)
- 3 cups reduced sodium fat-free chicken broth
- 2 cups frozen cut okra
- 1 teaspoon celery seed or 1/2 tsp. celery salt
- One red bell pepper, seeded and chopped
- 1 large onion, chopped
- 1 1/2 teaspoons Cajun seasoning
- 1 teaspoon chopped garlic
- 1 teaspoon Worcestershire sauce
- 1 teaspoon ground thyme

Step 1
Season chicken with salt and pepper, and place in the crock pot. Add all remaining ingredients and lightly stir.
Cook on high for 3 to 4 hours or on low for 7 to 8 hours, until chicken is fully cooked.
Remove chicken and place in a large bowl. Shred each piece using two forks – one to hold the chicken and place. And of the to scrape across to me and shred it.
Return shredded chicken to the crock pot, and give you gumbo a star. If you like, season to taste with additional salt and pepper. Serve.
