Hot Tamale Pie

Saw this on Good Morning Arkansas....changed the original recipe...mmm good!
I only used a half a can of tomatoes the first time I made this and cooked the meat mixture down....but after baking, it was a little dry. We just added more salsa, but I will add the whole can of tomatoes next time and not cook the meat mixture as much, to keep more of the juices in the mixture. I also drained the black beans....maybe I should have left the juices in the beans also!

Ingredients

  • 1 lb. ground beef
  • onion
  • diced canned tomato
  • jarred jalapenos diced
  • chili powder
  • cumin
  • salt
  • chipotle pepper ground
  • black beans
  • Grated Cheddar cheese
  • corn
  • 2 packages of Jiffy Cornbread
  • 2 eggs
  • 1 cup milk

Preparation

Step 1

Brown the ground beef with onion
add can of tomatoes, jalapenos, black beans and spices
Cook for about 5 minutes
Make the jiffy mix according to the package directions...but instead of 1/3 cup of milk, add 1/2 cup milk per package
Spray casserole dish with nonstick spray
In the casserole pan, spread one package of the jiffy cornbread batter on the bottom of the pan.
Pour can of corn over the cornbread batter (I forgot to do this the first time I made it, so I think you should drain the corn)
Add the meat mixture over the cornbread batter
Sprinkle the meat with shredded cheese
Pour the other package of jiffy cornbread batter on top
Bake at 350 degrees for 30 minutes
Add more shredded cheddar cheese and put back in the oven just to melt cheese
Serve with sour cream, jalapenos and salsa. I also added some shredded lettuce. Black olives and avocados would also be good.
