Beef in Burgundy

Ingredients

  • 1 # beef round/steak, cut in strips
  • 2 T oil
  • 1 C thinly sliced carrots
  • 1/4 C sliced green onions
  • 1/4 # mushrooms, sliced thin
  • 1 T flour
  • 1 t salt
  • 1/4 t pepper
  • 1/4 t thyme
  • 1/2 C burgundy wine
  • 1/2 C beef broth

Preparation

Step 1

Brown beef in hot oil. Remove and set aside. Saute carrots and green onions in pan drippings til carrots are crisp tender. Add mushrooms, saute 2 minutes. Stir in flour, salt, pepper and thyme. Gradually stir in wine and broth. Add meat. Cover and simmer 20 minutes or til meat is tender. Serve over rice or noodles.
