- cherry tomatoes cut in half
- sugar
- olive oil
- kosher salt
- pepper

Step 1
· Preheat oven to 325 degrees.
· Wash cherry tomatoes and dry them in a kitchen towel.
· Cut each tomato in half and toss with olive oil, kosher salt, pepper and a teaspoon of sugar.
· Cover a cookie sheet with tin foil and spray with cooking spray.
· Place tomatoes cut side up and roast until cooked but not crispy – about 1 hour and 40 minutes. (I usually check on them after an hour and assess how much more time they may need. Sometimes they need the full 40 minutes, sometimes just 20 minutes. I suppose it depends on the size of the tomatoes and how much water is in them.)
· Cool them. If you want, cover them with a little olive oil
