Ingredients
- 4 Boneless skinless chicken breasts cooked, shredded
- 1 14 1/2oz can Stewed Tomatoes, drained
- 2 cans Green Chilies, chopped
- 1 28 oz can Enchilada Sauce
- 1 14 1/2 can Chicken Broth
- 1 cup Onion, finely chopped
- 2 cloves Garlic , minced
- 1 tsp Salt
- I tsp Ground cumin
- I tsp Chili Powder
- 3/4 tsp black pepper
- 1/4 cup Fresh Cilantro
- 1 cup Frozen Corn
- 1 Yellow Squash, diced
- 2 Zucchini, Diced
Preparation
Step 1
Combine chicken, tomatoes, chilies, enchilada sauce, broth, onions, garlic, salt, cumin,
chili powder, pepper, cilantro, corn, squash and zucchini in crock pot
Cook on low for 8 hours.
