Herbed Goat Cheese Stuffed Mini Bell Peppers

Ingredients

  • 20 mini bell peppers, ends and seeds removed
  • 8 oz goat cheese, room temperature
  • 1 egg yolk, room temperature
  • 2 Tbl scallions, thinly sliced
  • 1 Tbl fresh tarragon, finely minced
  • 1 tsp fresh thyme, finely minced
  • 1 tsp sugar
  • Salt and pepper to taste

Step 1

Combine all but the peppers. Stuff peppers with cheese mixture and grill.
