Margarita Prawns

Ingredients

  • 1 diced tomato
  • 1 diced avocado
  • 2 T Butter
  • 1 lb large Prawns
  • Juice of 1 lime
  • 1/2 c margarita mix
  • 1/4 c tequila
  • Juice of 1 lime
  • 1/2 c margarita mix
  • 1/4 c tequila
  • 2 T butter

Preparation

Step 1

Saute tomato and avocado in 2 T butter. Add prawns and lime juice, margarita mix and tequila. Bring to a boil and cook prawns until just undercooked. Remove prawns from pan and set aside. Add another 1/2 c margarita Mix, lime and tequila. Bring to a boil and reduce sauce until thickened. finish with butter. Add back prawns and toss to coat.
