Roasted Potatoes and Carrots

  • Potatoes, quartered or chunked (1 1/2”)
  • Baby carrots

Preparation

Step 1

Toss the potatoes and carrots with about 3-4 Tbsp olive oil and sprinkle generously with salt and pepper. Place in a single layer on a baking sheet and roast at 423 for 30 min.
