Pumpkin Loaf Cake

Ingredients

  • Glaze:
  • 1 3/4 cups flour
  • 1 tea. baking soda
  • 1/2 tea. salt
  • 1 tea. cinnamon
  • 1/2 tea. nutmeg
  • 1/4 tea. ginger
  • 1/4 tea. cloves
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup canned pumpkin
  • 3/4 cup semisweet chocolate morsels
  • 1/2 cup powdered sugar
  • 1/8 tea. nutmeg
  • 1/8 tea. cinnamon
  • 1-2 Tbsp. milk

Preparation

Step 1

Combine flour, baking soda, salt, cinnamon, nutmeg, ginger and cloves.

Cream butter and sugar together until fluffy. Add eggs and blend well.

Alternately add dry ingredients and pumpkin to creamed mixture, begging and ending with dry ingredients. Mix thoroughly. Stir in chocolate morsels.

Pour batter into greased 9x5 loaf pan.

Bake at 350 degrees for 65-75 minutes. Cool in pan.

Prepare glaze by combining powdered sugar, nutmeg and cinnamon. Add enough milk to form glaze consistency. Drizzle glaze over cake.
