Ingredients
- 15 ounce can black beans,
- drained and rinsed
- 4 ounce can chopped black olives, drained
- 1/4 cup finely chopped onion
- 1 clove minced garlic
- 2 Tablespoons vegetable oil
- 2 Tablespoons lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon black pepper
- 8 ounces soft cream cheese
- 2 hard-cooked chopped eggs
- 2 sliced green onions
- pita chips or crackers
Preparation
Step 1
Mix together : beans, black olives, onion, garlic, vegetable oil, lime juice, salt and peppers. Cover and chill at least 2 hours. Spread cream cheese on a plate, and spoon bean mixture over cream cheese, leaving a 1/2" border free of the bean mixture around the outer edge of the cream cheese. Make a circle of the chopped eggs, leaving a small empty area in the center of the plate. Sprinkle the green onions in the center. Serve with crackers or pita chips.
