- 1 lg cabbage trimmed, quartered and cored
- 1 Med sweet green pepper cored, seeded and minced
- 1 med sweet onion (Bermuda or Spanish) chopped fine
- 2 carrots grated
- 1 cup sugar
- 1 Tsp salt
- 1 tsp dried mustard
- 1 cup cider vinegar
- 2/3 cup vegetable oil
- 1 tsp celery seeds
With a sharp knife slice each cabbage quarter very fine, combine with pepper, onion and carrots in a lg bowl and toss and mix.
Mix sugar. salt, mustard and celery seeds in a sm sauce pan, add vinegar and oil, and let it come to a boil over moderate heat, stirring until sugar dissolves.
Pour over the cabbage, toss well, cool, cover and refrigerate until time to serve.
