Dijon Mustard

Ingredients

  • 2 cups white wine
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 ounces ground dry yellow mustard
  • 2 tablespoons honey
  • 1 tablespoon oil
  • 2 teaspoons salt
  • 3-4 teaspoons drops pepper sauce

Preparation

Step 1

Combine wine, onion, and garlic in a saucepan.

Heat to boiling, then reduce heat and simmer for five minutes.

Strain, discarding solids. Set liquid aside.

Place mustard powder in a saucepan.

Add the onion and garlic infused wine, whisking until smooth.

Add remaining ingredients and heat until thickened, stirring constantly.

Transfer to nonreactive container and refrigerate for at least two days to allow the flavors to blend.
