Corn Chowder - Kim Roberts

Ingredients

  • 6 slices bacon
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 2 cups milk
  • 2 cups chicken broth
  • 1/2 cup buttermilk
  • 3 potatoes diced, *
  • 2 cups corn
  • salt & pepper to taste
  • grated cheese

Preparation

Step 1

Brown bacon and crumble. Cook onion in left over bacon grease, add flour and mix well. Slowly add milk (to get lumps out of the flour), the broth, and buttermilk. Bring to a boil. Add potatoes and corn. Season to your desire and simmer for 20-30 minutes or until potatoes are tender. Top with bacon and cheese.

*You may cook the potatoes before adding them and this will save more cooking time.
