Ingredients
- 1 pkg. (18 1/4 oz.) lemon cake mix
- 2 eggs, divided
- 1/3 c. vegetable oil
- 1 pkg. (8 oz.) cream cheese, softened 1/3 c. sugar
- 2 tsp. lemon juice
Preparation
Step 1
1. Preheat oven to 350º F.
2. In a large bowl, beat cake mix, 1 egg, & oil until crumbly. Reserve 1 c. of cake mixture for topping; set aside. Press remaining cake mixture into an ungreased 9- by 13-inch baking dish. Bake for 12 min., or until lightly browned.
3. In a medium bowl, beat cream cheese until creamy. Add sugar, lemon juice, & remaining egg, beating until smooth. Pour cream cheese mixture over baked crust & sprinkle with reserved 1 c. cake mixture.
4. Bake for 20 to 22 min., or until lightly browned. Let cool slightly, then cover & chill. Cut into bars & serve.
