Ingredients
- 1/2 c. (1 stick) plus 1 Tbls. butter, softened, divided
- 1 pkg. (3 oz.) cream cheese, softened 1 c. all-purpose flour
- 1/2 c. packed light brown sugar
- 1 egg
- 1 tsp. vanilla extract
- 1/8 tsp. salt
- 1/2 c. chopped pecans
Preparation
Step 1
1. Beat ½ c. butter & cream cheese till creamy.
2. Add flour, beating till well combined.
3. Cover & chill dough 30 min.
4. Preheat oven to 325º.
5. In another bowl, combine remaining ingredients, including remaining 1 T. butter; stir till well combined.
6. Shape chilled dough into twenty-four 1-inch balls. Place each dough ball in ungreased mini-muffin c.. Using thumb, press dough to form a crust.
7. Spoon pecan mixture into crusts, filling three-quarters full.
8. Bake 35 to 40 min., or till filling is firm & crust is golden.
9. Cool slightly, remove to wire rack to cool completely. Cover & chill till ready to serve.
