Ingredients
- 1 c. sliced almonds
- 3 1/2 c. flour
- 1 c. sugar
- 1 T. ground ginger
- 2 tsp. grated lemon zest
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1 c. unsalted butter
- 1/2 c. molasses
- 1 tsp lemon extract
- 1 tsp. vanilla
- 1/4 c. minced crystallized ginger

Step 1
Heat oven to 350°. Spread almonds in a single layer on baking sheet. Bake until golden, 5 to 10 min. Cool. Combine flour, sugar, ginger, lemon zest, baking soda, & cinnamon. Add butter, molasses, lemon, & vanilla & beat until combined. With wooden spoon, stir in almonds & crystallized ginger. Divide dough in half. Shape into 7X3" rectangle about 1 ¼" thick. Wrap in plastic & place in fridge 2 hrs. Use sharp knife & cut rectangles crosswise into very thin slices (
