Italian Meatloaf

Let meatloaf cool to room temperature. Cut into thin slices and serve on a platter of vinaigrette-dressed butter lettuce. Serve with pocket bread-each person making his own sandwich.

Ingredients

  • 1 lb. ground beef
  • 1/4 lb. sweet or hot Italian sausages (about 2 links)
  • 2 green onions, chopped
  • 1 clove garlic, minced or pressed
  • 1/4 c. dry bread crumbs or 1/2 c. soft bread crumbs
  • 3/4 tsp. dried thyme leaves
  • salt to taste
  • 1/4 c. red wine
  • 1/2 c. cubed Provolone cheese
  • green pepper rings

Preparation

Step 1

Combine beef, sausages (remove from casings),green onions, garlic, crumbs, egg, tomato paste, thyme, salt and wine. Mix thoroughly. Place half the mixture in a loaf pan. Make a well down the center. Fill with the cheese. Cover with remaining meat. Bake at 350° for 1 hr. Let sit 5 min. before serving. Garnish with green pepper rings.
