Pork and Orange Stir fry

Ingredients

  • 1 T finely shredded orange peel
  • 1/2 C orange juice, prepared
  • 2 T low sodium soy sauce
  • 2 tsp cornstarch
  • 1 tsp sugar
  • 1/8 tsp ground ginger
  • 2 large carrots, thinly sliced
  • 2 stalks celery, chopped
  • 2 T oil
  • 1 # lean, boneless pork (1/2" cubes)
  • 1/4 C cashews
  • hot cooked rice

Preparation

Step 1

Stir fry the pork in oil. Add remaining ingredients except cashews and rice. Stir til crisp-tender. Serve over hot rice and top with cashews.
