Sauteed Tomatoes w/ Sausage and Goat Cheese

Ingredients
- 2 T olive oil
- 1 pint cherry tomatoes cut in half
- 1/4 tsp. salt
- 4 pre-cooked Italian sausage sliced in 1/2 inch pieces
- 1/2 c green olives pitted and cut in quarters
- 2 c pre-cooked brown rice
- 1/2 c goat cheese or blue cheese crumbles

Preparation
Step 1
Heat olive oil and add tomatoes seasoning with a pinch of salt. Cook stirring occasionally until they begin to soften. Stir in sausage and reduce heat to medium. Cook until heated through. Turn off heat and add olives. Serve over rice and top with blue cheese or goat cheese.
