Goblin Eyes

Ingredients

  • 2/3 cup sifted all-purpose flour
  • 1/4 cup sugar
  • 1 cup shredded coconut
  • 1/2 tsp baking soda
  • 1 egg, beaten
  • 1/2 tsp vanilla extract
  • 2 ounces bittersweet chocolate
  • Maraschino cherry halves, about 40
  • Parchment paper

Preparation

Step 1

In a medium bowl mix flour, sugar, coconut and baking soda. Add beaten egg and vanilla extract.

Melt chocolate in microwave for 1 minute. Blend with other ingredients. Mix well.

Form dough into 1-inch balls. Drop onto parchment paper-lined cookie sheet. Flatten with fork. Place 1/2 of red maraschino cherry in center of each. Bake at 350 F for 20 minutes. Cool 5 minutes.
