Caribbean-style Zatarain's Rice Copycat

Ingredients

  • 4 cups water
  • 2 tsp chicken bouillon
  • 1 cup long grain rice
  • 1/2 cup dry kidney beans
  • 1/4 cup dehydrated red and green bell peppers
  • 1/4 cup freeze dried onions
  • 1/4 cup chopped carrots
  • 1 tsp turmeric
  • 1 tsp dry mustard
  • 1/8 tsp cayenne pepper
  • 1/2 cup chopped pineapple
  • 1/4 cup sweetened coconut

Preparation

Step 1

Add the water and chicken bouillon to a medium saucepan.
Bring the ingredients to a boil.

When the water and bouillon begins to boil, stir in the brown rice and beans.
Then, return the ingredients to a boil.

Put a lid on the saucepan.
Reduce the heat, and allow the rice and beans to simmer for 30 minutes.

After 30 minutes, stir in the peppers, onions, carrots, turmeric, dry mustard, cayenne pepper, and pineapple.
Simmer the ingredients for another 20 minutes, or until the rice and beans are tender and the water has evaporated.

Stir in the sweetened coconut, and remove the pan from the heat.
Add salt and pepper to taste.

Let the rice and beans stand for five minutes to give the ingredients a chance to settle.
Serve hot.

To make this healthier and less expensive version of Zatarain's Rice even more diet-friendly, use brown rice instead of white rice.
