Ground Beef Snack Quiches

Tastes great with ground beef, but can also substitute bacon, ham, ground pork or sausage.

Ingredients
- 1/4 cup ground beef
- 1/8 - 1/4 tea. garlic powder
- 1/8 tea. pepper
- 1 cup bisquick
- 1/4 cup cornmeal
- 1/4 cup cold butter
- 2-3 Tbsp. boiling water
- 1 egg
- 1/2 cup half-and-half
- 1 Tbsp. chopped green onion
- 1 Tbsp. chopped sweet red pepper
- 1/8 - 1/4 tea. salt
- 1/8 - 1/4 tea. cayenne pepper
- 1/2 cup finely shredded cheddar cheese
Preparation
Step 1
In a saucepan, cook the beef, garlic powder and pepper over medium heat until meat is no longer pink; drain and set aside. In a small bowl, combine the Bisquick and cornmeal; cut in the butter until the mixture is crumbly. Add enough water to form a soft dough. Press onto bottom and up the sides of 18 greased miniature muffin cups. Place teaspoonfuls of beef mixture into each shell.
In a small bowl, combine the egg, cream, onion, red pepper, salt and cayenne; pour over beef mixture. Sprinkle with cheese.
Bake at 375 degrees for 20 minutes or until a knife inserted near the center comes out clean.
