Rice Pilaf

Ingredients

  • 1/2 cup onion, chopped
  • 1/2 cup sliced fresh button mushrooms or 1 can sliced mushrooms
  • 1/4 cup chopped cellery or green sweet pepper
  • 1 clove garlic, minced
  • 1 tbsp butter or margarine
  • 3/4 cup uncooked long grain rice
  • 1 1/2 tsp instant chicken, beef, or vegetable bouillon granules
  • 1/4 tsp black pepper
  • 2 slices bacon, crisp-cooked, drained, and crumbled, or 1/4 cup finely chopped cooked ham or Canadian bacon

Preparation

Step 1

In medium saucepan, cook onion, mushrooms, celery, and garlic in hot butter until tender.

Carefully stir in rice, bouillon granules, pepper, and 1 1/2 cups water. Bring to boiling; reduce heat. Simmer, covered, about 15 minutes or until the rice is tender and liquid is absorbed. If desired, stir in crumbled bacon.
