Authentic Falafel Balls

Ingredients

  • 1 can (19 oz) chickpeas
  • 1/2 large onion,roughly chopped (about 1 cup)
  • 4 Tbs finely chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp dried hot pepper flakes
  • 4 cloves garlic
  • 1 tsp cumin
  • 1 tsp baking powder
  • 6 Tbs flour
  • vegetable oil for frying

Preparation

Step 1

Drain chickpeas,place peas and onion in a food processor with the S blade. Add parsley,salt,hot pepper,garlic and cumin. Process until blended and not pureed.
Sprinkle in the baking powder and flour and pulse. (may need to add flour mixture shouldn't be sticky and it should form into a ball)
Transfer to a bowl and refrigerate,covered for several hrs.
Form chickpea mixture into balls about the size of walnuts,or use a falafel scoop
Heat 3" of oil to 375 degrees in a deep pot or a wok and fry one ball to test. If it falls apart it needs more flour.
Fry until outsides are brown,turning if necessary.
