Ingredients
- MERINGUE:
- 1 box vanilla pudding
- 2 cups milk
- 2 egg yolks well beaten (room temperature)-reserve whites for meringue
- 2 tsp. vanilla
- 1 can coconut
- egg whites (from above)
- 1/4 cup sugar
Preparation
Step 1
Put in double boiler, milk and egg yolks. Let warm. Add pudding mix. Scrape sides constantly and stir. Cook until thick. Add vanilla. Remove from stove and add coconut. Stir coconut through mixture - saving some for the top. Let cool before putting in pie shell. Top with meringue.
MERINGUE: Use reserved egg whites (room temperature). Beat until stiff. Add sugar slowly and beat until peaks form. Spread over pie. If using coconut,, sprinkle on top at this point. Put in oven and brown slowly.
