PINEAPPLE UPSIDE-DOWN CAKE

Ingredients

  • CAKE:
  • 1 can sliced pineapples
  • 1 cup brown sugar
  • 3 TBS butter
  • 3 eggs, well beaten
  • 1 1/2 cups sugar (add little by little)
  • 1/2 cup cold water
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. vanilla
  • pinch salt
  • maraschino cherries for middle of pineapple slices

Preparation

Step 1

Make paste of sugar and butter, and spread in bottom of large cast iron skillet. Lay pineapple slices and cherries on top and pour batter over it.

Bake at 375F.
