Lemon Garlic Soup

Ingredients

  • 2 whole garlic bulbs
  • 2 tbsp/30ml olive oil
  • 1 1/4 tsp salt
  • pinch white pepper
  • 1 lb potatoes, peeled and cut into large chunks
  • 1 strip (1x3") lemon rind
  • 2 to 3 tbsp lemon juice
  • 2 tbsp finely chopped celery leaves or parsley

Preparation

Step 1

Peel garlic cloves and trim off hard root ends
In saucepan, heat oil over low heat; add whole garlic cloves and 1/4 tsp salt, and cook, stirring often, until garlic is soft and light golden (do not brown), 15 -20 min
Stir in remaining salt, pepper, potatoes, lemon rind and 5 cups water
Bring to simmer, cover and simmer until potatoes begin to fall apart, about 25 min
Remove lemon rind. Puree in batches in blender or use immersion blender
Return to heat, stir in 2 tbsp lemon juice and taste. Add up to 1 tbsp more lemon juice to taste, and bring to simmer
Serve topped with celery leaves
