KALE & BRUSSELS SPROUTS SALAD

Ingredients

  • Salad:
  • 1 bunch leafy green kale
  • 8-10 large Brussels sprouts
  • 1/4 cup finely chopped purple onion
  • 1/3 cup whole roasted salted almonds, roughly chopped
  • 1/2 cup grated Parmesan cheese
  • Dressing:
  • 1/2 cup olive oil
  • 1/4 cup lemon juice
  • 2 tbsp grainy mustard
  • 1 small garlic clove, minced
  • 1 tsp sugar
  • Salt and freshly ground pepper

Preparation

Step 1

Remove ribs from kale and chop. Thinly slice the Brussels sprouts (cut in half first, if large). Put kale, sprouts and onion in a bowl.

To make dressing, put all ingredients in a bowl and whisk or jar and shake. Toss with salad and top with almonds and cheese. Set aside for an hour or so to let flavors mix.
