Kickoff Quesadillas

Ingredients

  • 1 lb. ground beef
  • 1 small onion, chopped
  • 1 pkg. Taco seasoning
  • 1 can (2.25 oz.) sliced olives
  • 1/3 cup water
  • 8 burrito sized flour tortillas
  • 2 cups shredded cheddar

Preparation

Step 1

Cook beef and onion over medium high heat for 7 minutes until beef is thoroughly cooked; drain fat. Stir in Taco Seasoning packet, olives and water; bring to a boil, reduce heat to low and cook, uncovered for 3 minutes. Spread 1 ¼ cups of mixture on four of the tortillas (spread out to the edges) then sprinkle ½ cup cheese over top of each meaty tortilla. Cover each with a second tortilla; brush lightly with water. Place on baking sheet; bake at 350° for 5 minutes. Makes 4 large quesadillas. Cut in wedges; serve with fresh salsa and guacamole.
