Ingredients
- 1/4 cup extra virgin olive oil
- 1 lb sugar pumpkin, or acorn squash, cut into 1" cubes
- 4 cloves garlic, thin slice
- 1 tsp chili flakes
- 3 tbsp red wine vinegar
- 3 tbsp honey
- 3 tbsp fresh mint, rough chop
Preparation
Step 1
In a large saute pan, heat oil until smoking. Add pumpkin and garlic and cook until pumpkin is light brown (4-5 mins). Add chili flakes, vinegar, and honey and bring to a boil. Reduce to a simmer until reduced to a syrupy glaze (10-12 mins). Remove from heat, add mint.
