Ingredients

    chicken breast halves, boneless and skinless

  • 3

    scallions, or green onions

  • 1

    large egg

  • 1

    C spinach

  • black pepper

  • nonstick cooking spray

  • 1/4

    C bread crumbs

  • 4

    slices provolone cheese

  • 1/2

    T lemon zest

  • 1

    T olive oil

Directions

Preheat oven to 425 Prepare baking pan with cooking spray In small bowl, prepare stuffing by mixing bread crumbs, spinach, green onions, lemon zest and egg. In another small bowl, prepare topping. Mix the juice of one lemon, olive oil and black pepper together. Set aside. Prepare chicken by butterflying each breast (cut down center), be careful not to slice completely through. Place one slice of cheese inside each open breast. Divide stuffing between each breast. Fold chicken back together keeping stuffing inside. Put all chicken breasts into baking dish. Whisk topping to ensure it is well mixed and drizzle ove top of breasts evenly. Put in oven for 40 minutes.
