Ingredients
- 1/2 cup parmesan cheese
- 3 tbsp butter
- 1/8 tsp cayenne
- 2 tbsp minced scallion
- 3 tbsp mayonnaise
- 1 tsp lemon zest
- 1 1/2 lbs sole fillets
- 2 tbsp lemon juice
Preparation
Step 1
1. Heat broiler.
2. In medium bowl, stir together all ingredients except fish and lemon juice. Place sole fillets on broiler pan; sprinkle with lemon juice. Broil 3-4 inches from heat until fish flakes with a fork (about 3-5 minutes). Spread Parmesan mixture over fillets and broil until bubbly and golden brown (3-5 minutes).
Notes: This was unbelievably easy and just delicious. Great way to eat fish. Cut butter back to 1.5 tbsp, didn't use scallion, added garlic, and left out the zest.
