Mini Chocolate Lave Cakes (Raw)

Flourless chocolate mini cakes with gooey chocolate lava oozing from the center and red raspberry sauce drizzled over top!
Beautiful personal cakes.

Ingredients

  • 3 cups raw walnuts (dry if soaked)
  • 1 cup pitted medjool dates
  • 2/3 cup cacao or carob
  • 1/4 tsp sea salt
  • *Chocolate Sauce recipe
  • *Raspberry Sauce recipe

Preparation

Step 1

Combine walnuts, dates, cocoa, and salt in food processor and process to mix well.
Press about 1/2 cup into 6 small 1/2 cup tartlet pans lined with plastic wrap, leaving deep tablespoon sized cavaties in the centers.
To serve scoop 1 Tbsp of the chocolate sauce into the center of each cake. Flip upside down onto plate and release from pan, remove plastic wrap. Drizzle 1-2 Tbsp raspberry sauce over each and enjoy.
Will keep 3 days in the fridge, separately.
