SUMMER SQUASH CASSEROLE

A delicious way to use yellow squash!

Ingredients

  • 2 cups steamed, sliced squash
  • 3/4 stick butter or margarine, melted
  • 2 eggs
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup chopped onion
  • 1 cup grated cheese (Monterey Jack is good)
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 2 cups cracker crumbs (Pepperidge Farm stuffing is good)

Preparation

Step 1

Steam squash, layer in greased casserole dish. Mix other ingredients well and pour over squash. Bake at 375 degrees F. for 40 minutes.
