Ingredients
- 1 Tbsp. vegetable oil
- 1/2 cup chopped yellow onion
- 1 clove garlic, minced
- 1 Tbsp. butter
- 2 Tbsp. all-purpose flour
- 1 cup milk
- 1/2 tsp. dried marjoram
- 1/2 tsp. salt
- Freshly ground pepper to taste
- 1 cup low-fat cottage cheese
- 6 ounces egg noodles (about 2-1/2 cups) cooked and drained
- 1 package frozen chopped broccoli (10 ounces) thawed
- 1 cup grated cheddar cheese
- 3 Tbsp. freshly grated Parmesan cheese
Preparation
Step 1
1. Preheat oven to 350F.
2. In a medium saucepan over medium heat, warm oil. Add onion and garlic and sauté until tender, about 5 minutes. Add butter and flour and stir until bubbly. Pour in milk and seasonings and whisk until thickened, about 3 minutes. Remove from heat and stir in cottage cheese.
3. In a 2-1/2 quart casserole dish lightly coated with cooking spray or oil, place noodles, white sauce, and broccoli and mix well. Top with cheeses.
4. Bake, uncovered, until bubbly, about 35 minutes.
Notes: This was great. Used way too many pots, pans, and dishes.
