Beef and Barley Skillet

Ingredients

  • 1 pound lean ground beef (95%)
  • 1 1/4 cups sliced mushrooms
  • 1/2 cups chopped onion
  • 1 1/2 teaspoons dried thyme
  • 1/4 teaspoon ground black pepper
  • 1 cup barley
  • 2 1/2 cups water
  • 2 1/2 teaspoons beef bouillon granules
  • 1 cups frozen green peas, thawed

Preparation

Step 1

1. Brown beef, drain fat.

2. Add mushrooms-bouillion, bring to a boil. Take off heat, cover and bake at 350 for 55 mins.

3. Stir in peas and a bit of water if mixture seems dry.

4. Cover and bake 5 mins, until barley is tender and peas are heated through.

Notes: Good comfort food! Added a bit of lowfat cheddar on top for extra flavor, would definitely do that again. Used entire package of peas and 10 oz mushrooms.
