Ingredients
- Brushing Sauce:
- 4-6 cups mesquite wood chips
- 1 - 2 -3 lb. beef brisket
- 2 teaspoons seasoned salt
- 1 teaspoon paprika
- 1 teaspoon pepper
- 1 recipe brushing sauce
- 1 recipe 5-alarm sauce
- 1/4 cup dry red wine
- 4 teaspoons Worcestershire sauce
- 1 tablespoon cooking oil
- 1 tablespoon red wine or cider vinegar
- 1 clove garlic minced
- 1/2 teaspoon crushed coriander seed
- 1/2 teaspoon hot style-mustard
- Dash ground red pepper
- -Alarm Sauce:
- 1 cup catsup
- 1 large tomato peeled, seeded and chopped (3/4 cup)
- 1 small green pepper chopped (1/2 cup)
- 2 tablespoons chopped onion
- 2 tablespoons brown sugar
- 1-2 tablespoons steak sauce
- 1-2 tablespoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground nutmeg
- 1.4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/8 teaspoon ground ginger
- 1/8 teaspoon pepper
Preparation
Step 1
At least 1 hour before grilling, soak wood chips in enough water to cover. Trim fat from beef. In small mixing bowl stir together seasoned salt, paprika and pepper, rub onto brisket.
Drain the wood chips. In covered grill arrange medium slow coals around a drip pan. Pour 1" of water into drip pan. Sprinkle some of the wood chips onto the coals. Place brisket fat side up on grill rack over the drip pan but not over the coals. Lower grill hood. Grill for 2-2-1/2 hours or until meat is very tender. Every 30 minutes or as needed brush with brushing sauce, add more coals, drained wood chips and water. To serve thinly slice meat across grain, arrange on plates.
Brushing Sauce:
In bowl stir together dry red wine, Worcestershire sauce, cooking oil, red wine or cider vinegar, minced garlic, crushed coriander seed, hot-style mustard and dash of red pepper.
5-Alarm Sauce:
In small saucepan stir together catsup, tomato, green pepper, onion, brown sugar, steak sauce, Worcestershire sauce, garlic powder, ground nutmeg, ground cinnamon, ground cloves, ground ginger and pepper.
Bring to boiling reduce heat. Cover and simmer about 5 minutes until green pepper is crisp-tender. Serve warm or at room temperature.
