Ingredients

  • 1/3 cup fancy molasses
  • 1/3 cup butter
  • 1 egg, beaten
  • 1 +3/4 cups flour
  • 1/3 cup sugar
  • 1/2 tsp. baking soda
  • 1 tsp. each cinnamon + ground ginger
  • 1/4 tsp. each ground cloves, nutmeg + black pepper
  • 1/2 cup sugar either confectioners or granulated, to roll cookies when baked

Step 1

Preheat oven to 375F

In a saucepan, over low heat, melt butter and molasses together, stirring to combine well. Remove from heat, let cool. stir in beaten egg.

In another bowl, sift dry ingredients together. Add dry ingredients gradually to molasses, use hands if necessary to blend thoroughly.

Shape into 1-inch balls. place on an ungreased baking sheet. Bake 10-12 minutes. They should look dry and cracked, but do not allow to burn, placing baking rack in middle of oven or a bit higher is best.

Let cool until able to handle with hands. roll warm cookies in sugar of choice. Allow to cool thoroughly and store in an airtight container.
