Sweet and Spicy Ginger Cookies

Crystallized ginger and cayenne pepper add a spicy kick to these soft and chewy giner cookies. To prevent molassed from sticking to a measuring cup measure the oil first then in the same cup measure the molasses. It will slide easily out of the cup

Ingredients

  • 2 C flour
  • 1 TBS ground ginger
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1 C packed dark brown sugar
  • 3/4 C oil
  • 1/3 C molasses
  • 1 egg
  • 1/4 - 1/2 tsp cayenne pepper
  • 3/4 C chopped crystallized ginger
  • 1/2 C sugar

Preparation

Step 1

Heat over to 375 degrees. Line baking sheets with parchment paper. Whisk flour ginger baking soda salt cinnamon and cloves in med bowl. Beat brown sugar oil molasses egg and cayenne pepper in large bowl at med speed 1 min or until smooth. At low speed beat in flour mixture just until smooth dough forms. Stir in crystallized ginger. Place sugar in small bowl. Roll 1 rounded TBS of dought per cookie in to 1 1/4 inch ball roll each ball in sugar. Place 3 inches apart on baking sheets. Bake 8 min or until cookies are flat with cracks on top and centers feel firm when lightly toached. Cool on pan on wire rack 5 mins. Place cookies on rack cool completely.
