Breakfast Porridge (GF/CF/Paleo/SF)

This porridge is quick and easy, and infinitely variable: use sunflower or hemp instead of the pumpkin seeds; substitute another favorite nut instead of the walnuts; include the coconut or omit it, as you wish. It’s also a great all-year round breakfast as you won’t have to heat up the kitchen cooking it on the stovetop. In fact, I daresay, it’s almost instant!

Ingredients

  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon flax seeds
  • 1 tablespoon chia seeds
  • 1/4 cup walnuts
  • 1/2 to 1 teaspoon cinnamon
  • 3/4 cup boiling water
  • 1/4 teaspoon celtic sea salt (I like things super salty, so you may want to reduce this)
  • 2-4 tbsp coconut milk or nut milk of choice to your taste
  • 2-7 drops plain or vanilla stevia liquid

Preparation

Step 1

Combine all dry ingredients in a vitamix

Blend until finely ground

Pour boiling water into Vitamix, cover with lid

Blend very carefully starting on low setting, then moving to high, until porridge is smooth

Transfer porridge to a bowl

Add stevia and milk of choice to taste and stir well. Garnish with berries, chopped fruit, raisins, sunflower seeds or treats of your choice

Serve

Note: you can make a large batch of this cereal in advance and store it in single servings in the freezer so it’s ready to go when you need it: defrost overnight in the refrigerator and enjoy!
