Ingredients
- 10 garlic cloves, minced
- 6 carrots, diced
- 6 stalks celery, diced
- 2 onions, diced
- 2 15-oz cans crushed tomatoes
- 2 6-oz cans tomato paste
- 4 cups beef stock
- 2 cups red wine
- 8 bone-in beef short ribs (about 7 pounds)
- 1 cup all-purpose flour
- 1/2 cup extra-virgin olive oil

Step 1
Preheat oven to 350. Blend first eight ingredients in large bowl, then set aside. Dredge each short rib in flour. Heat oil in a large skillet over medium-high heat. Working in batches, cook short ribs until golden brown, about 6 to 8 minutes per side. Arrange ribs in baking pan. Pour tomato mixture over ribs. Bake, covered, until fork tender, 2 to 2 1/2 hours.
