Ingredients

  • Cake Batter-
  • 2 sticks butter(salted)
  • 2 c flour
  • 2 c sugar
  • 2 eggs(beaten)
  • 4 tbsp. cocoa powder
  • 1/2 c buttermilk
  • 1-2 tsp vanilla
  • 1 tsp baking soda
  • 1 c water (boiling)
  • 1/4 tsp salt
  • Icing-
  • 1/2 c chopped pecans
  • 1 3/4 c melted butter
  • 6 tbsp milk
  • 4 heaping tbsp cocoa powder
  • 3/4 lb powdered sugar
  • 1 tsp vanilla

Preparation

Step 1

For Cake

1)First, melt 2 sticks regular (not unsalted) butter in a saucepan. While it’s melting, boil 1 cup of water. When the butter is melted, add 4 heaping tablespoons cocoa powder and mix thoroughly.

2)With the heat still on, pour in the boiling water and allow the mixture to bubble for 30 seconds. Turn off heat and set aside.

3)In a large bowl combine 2 c flour, 2 c sugar, 1/4 tsp salt. Pour the hot butter/cocoa mix over the top and mix together slightly.

4)In a measuring cup pour in 1/2 c buttermilk and add two beaten eggs, vanilla, and baking soda and mix.

5)Add the buttermilk mixture to the chocolate/flour mixture and stir together well. Pour into Jelly roll pan and bake at 350 for 20min.

For Icing:

6)In a sauce pan melt 1 3/4 sticks butter, once melted mix in 4 heaping Tbsp cocoa powder and allow to bubble for 30 seconds, then turn off heat.

7)Stir in 6 Tbsp milk and 1 tsp vanilla. Mix in powdered sugar and then stir in chopped pecans. Then pour the icing over the warm cake.
