Ingredients

    tbsp. butter

  • 1-2

    fresh mushrooms chopped

  • 1/2

    medium onion chopped

  • 1

    stalk celery chopped

  • 1

    medium carrot chopped

  • 1

    14.5-oz. can vegetable or chicken stock

  • 1/8

    tsp. salt

  • 1/8

    tsp. cayenne pepper

  • 3/4

    cup whole milk

  • 3/4

    cup heavy cream

  • 1/2

    cup dry white wine

  • 2 to 2 1/2

    cups lobster meat

Directions

In a large pot, melt the butter over medium heat. Add mushrooms, onion, celery and carrot. Saute about 10 minutes. Add stock, salt and cayenne. Bring to a boil and simmer for 10 minutes. Turn the stove off and divide the lobster meat in half. Add one half to the pot. Dump the contents of the pot into a blender or puree with a hand blender. With the puree in the pot, stir in milk, cream, wine and remaining lobster meat. Cook over low heat, stirring often until thickened which takes about 30 minutes.
