Ingredients
- 3 cans (10 oz. size) red enchilada sauce
- 1 large onion, chopped
- 3 tsp. jarred minced garlic in oil
- 1/2 tsp. pepper
- 2 1/2 lbs. boneless pork loin roast, trimmed
- 1/2 cup snipped fresh cilantro
- 2 tbsp. lime juice
- Sour cream

Step 1
Mix everything together except the pork, cilantro, and lime juice in the slow cooker. Add pork. Cover and cook on low for 7 to 9 hours. Take out the pork and shred it. Add cilantro, lime juice, and pork back to the cooker and warm. Serve in rolled up tortillas with an optional dollop of sour cream.
