Ingredients
- 3 cups cold basmati rice (leftover takeout works wonderfully)
- 1/3 cup Italian dressing
- 2 large tomatoes, chopped
- 1 cucumber, peeled, seeded and chopped
- 1/2 red onion, chopped
- 1/2 cup chopped parsley
