Pineapple Turnovers

Ingredients

  • Turnovers:
  • 4 eggs
  • 6 cups all purpose flour
  • 1 lb. margarine
  • 1 envelope of yeast
  • ( follow the instructions on the package)
  • Pineapple Filling:
  • 1 can crushed pineapple
  • 4 tablespoons cornstarch
  • 1 cup sugar

Preparation

Step 1

Turnover dough:

Preheat oven to 350 degrees.

In a cup mix, water, sugar and yeast (follow the instructions on the back of the package). Set aside and it should double in volume.

In a bowl, mix together eggs and margarine, with a hand mixer beat until combined.

Put flour onto the counter top and pour the egg and margarine mixture and combine together with your hands and form into a dough. When formed divide the dough into 7 balls. Put in bowl cover with plastic wrap and refrigerate overnight.

On a floured counter top roll each ball into a 10" circle. With a ravioli cutter, cut the circle as you would a pie, possible 8-10 pieces. Spread pineapple filling on each piece and roll. Place on a parchment paper lined cookie sheet. Bake for 20-25 minutes until golden brown.









Pineapple Filling:

In a saucepan bring to a boil crushed pineapple, cornstarch and sugar. Cook over medium heat until thickened.
