Colin Cowie's Cheese Vinaigrette

Serve on a salad of frisee, mixed greens, radicchio, endive, and arugula topped with sliced pears & toasted walnuts.

Ingredients

  • 1/4 c white wine vinegar
  • 1 T Dijon mustard
  • 1 T chopped shallots
  • 1/4 t salt
  • 1/4 t freshly ground black pepper
  • 1 c EVOO
  • 2 oz+ Stilton cheese

Preparation

Step 1

In a blender, puree the vinegar, mustard, shallots, cheese, salt, and pepper. Slowly add in oil.
